The Brewing Intermediate course covers the following topics:

  • History of brewing research from 1952 till today
  • The brewing process: wetting, hydrolysis & extraction
  • The ideal extraction and strength range, by navigating the Coffee brewing control chart
  • Strength measuring methods and usage of a refractometer
  • Water to coffee ratio, grind size, brew time, water temperature, agitation, filtration method and roast level
  • Water quality
  • Cold brew
  • Grinding, grinder & burr types, grind analysis
